After earning a scholarship to study in France, Chef Avin returned to India and noticed a stark gap in baking standards. Specialized schools were non-existent, and the industry lagged behind global benchmarks. Determined to change this, he co-founded Lavonne, India’s first specialized baking academy, where he has cultivated an entire generation of bakers, equipped with the expertise to compete on the global stage.
